Morning Coffee
Rinse coffee pot with boiling water

1 egg slightly beaten in grounds
up to 8 tbsp. of coffee per egg
Boil for 8 minutes for strong coffee.

Combine with an equal quantity of
scalded milk.

Iced Coffee
Prepare grounds for pot using 1 1/2 tbsp.
ground coffee per cup.
Pour into tall glasses filled with ice

Tomato Relish
1 quart ripe tomatoes
6 small onions
2 green bell peppers
1 quart green tomatoes
3 red bell peppers
1/2 c. Salt
2 c. Vinegar
2 c. Sugar

Directions:
Chop green tomatoes then add salt.
Allow to stand overnight then drain.
Chop ripe tomatoes,onions and
peppers then add to green tomatoes.
Add vinegar and sugar.
Heat to boiling then simmer 30
minutes stirring frequently.
BigT's Fries
I use a Ninja
3 big potatoes of choice
Preheat air fryer to 400
Timer 20 minutes.
Cut into leangths but not tiny
or too thin.
Place tater strips in fryer then
spray with canola oil then
adding garlic powder salt&pepper
At 10 min. open fryer and toss
taters about.
Fry the remaining 10 minutes
then cool.
Secret sauce: Mayo and Ketchup
add pickles if desired
Secret sauce #2: Mayo,vinegar
and dill pickles
Southern Spoon Bread
1/2 c. Yellow Cornmeal
1 tsp. Baking powder
1/2 tsp. Salt
1/4 tsp. Baking soda
1/2 c. Boiling Water
2 well beaten eggs
1 c. Buttermilk
3 tbsp. Melted butter

Preheat oven to 400 f.

Directions;
Sift together cornmeal , Baking powder
Salt and soda.
While stirring add in boiling water.
Then add eggs stirring then add buttermilk
Melt butter in baking dish,coating sides well.
Pour in mixture and place in oven.
Bake for 45 minutes
Molasses Squares
1/2 c. Sugar
1/3 c. Butter
1/3 c. Molasses
1/3 c. Water
Pinch of salt

Directions:
Combine ingredients and boil to soft
ball 275 degrees farenheit.
Pour into well greased pan.
Cut into squares when nearly cool.

Cottage Cheese Pancakes
1 c. Cottage cheese
3 Large eggs
1 tsp. Vanilla
1 c. Flour
2 tsp. Baking powder
1 tbsp. Cooking oil

Use a Blender or hand mixer until
smooth.
Use cooking spray to coat pan on
medium heat
These pancakes are light and fluffy
Use butter and top with maple syrup
Jellied Ambrosia
1 envelope gelatin
1/4 c. Cold water
1/4 c. Boiling water
1/4 c. Sugar
1 1/4 c. Orange juice
1 tbsp. Lemon Juice
2 large oranges
1 Large Banana
3 tbsp. Shredded coconut

Directions;
Soften gelatin in cold water.
Dissolve in boiling water.
Add sugar and stir until completely
dissolved.
Add orange and lemon juice,let cool
Section oranges and slice into pieces
Slice banana.
When gelatin is syrupy,fold in fruits
and coconut and place in mold.
Blue Cheese Burgers
1 beaten egg
1 tbsp. Worcestershire
1/3 c. rye bread crumbs
1 tsp. mustard
Dash of pepper
Dash garlic powder
1 1/2 lbs. Ground beef
3/4 c. crumbled blue cheese
6 toasted buns

Mix in bowl egg and worcestershire,Stir in bread crumbs,mustard,pepper and garlic powder.
Add ground beef,mix well.
Form 12 patties,top with 2 tbsp of blue cheese, place pattie over and seal edges.
Grill patties over medium heat 7 minutes each side
Serves 2 Big Guys or Momma with 3 little ones
